French Nachos

The French call it “Niçoise” – a composed salad of mostly tuna, potatoes, hard-boiled eggs, green beans, tomatoes and Niçoise olives. But when I think ‘French salad,’ I can’t help but brainstorm a nacho version! And if we’re being honest here – this second item for my virtual nacho truck was inspired by an Instagram (Insty) friend, @ooh_la_nicoise – “Just two girls in search for the perfect nicoise!”

The CHIP: Potato-chip crusted tuna bites.

The SAUCE: An egg-salad with all the colors of green beens, cherry tomatoes, shallot, yellow pepper and dijon mustard.

The TOPPING: A Niçoise olive tapenade…complemented with flat fillets anchovies, sun dried tomatoes in sunflower oil and capers, roasted garlic, herbs and fresh parsley.

And of course, the perfect bite.

…and when there’s more than one, we call them NACHOS!
